I didn’t include fresh chives. I also switched cascabel chiles with guajillo (aka cascavel with a “v”) chiles. The internet says they are fairly similar. I replaced Mexican beer with chicken broth. The chorizo I bought was weird. The “chili tea” sat for much longer than the recipe says—like an extra hour or so. The dish barely fit into my 6 qt Dutch oven, so if I were to make this again, I would try making it in my giant stockpot.
Food Review
The spice paste had chunks of chili in it even though I made an effort to have the food processor blend it completely. Chunks of chili are not fun to eat, so next time I would put the spice paste through a fine mesh sieve. The meat was very tender and nice. The recipe was a lot of effort (an hour for cutting up chilis!) and the results were okay, so I probably won’t make this again.
