Cooking Details

Since the main instructions for this recipe revolve just around the meat, I thought it would be an easier recipe. But, the two marinades took forever to put together since there were lots of ingredients in the marinade to chop/juice/etc. Plus, there is the marinating and oven time.

I accidentally purchased 10 lb meat instead of 5 lb, which is way off. To try to mitigate the damage, I reduced the oven to 275 and stuck an oven-safe thermometer in it and kept the meat in for many hours until it was done. Also, I didn’t have an oven-safe rack to use.

I used pre-ground pepper. I used apple vinegar instead of spiced rum with a 1:1 ratio. The limes were dry so I used lime juice from a bottle and still used the rinds.

Food Review

The sandwiches turned out delicious. As usual with Babish recipes, this recipe was more effort than I normally would be willing to put forth. Of all of Babish’s recipes I have made, this is Jacob’s favorite.
